Wilson is a big fan of cookies. I think it would be safe to say that cookies are his favorite sweet, particularly chocolate chip cookies and more specifically oatmeal chocolate chip cookies. He has an appreciation for healthy eating and realizes that cookies do not fall in the low-calorie low-fat category. I am always seeking out healthier recipes so he can get his occasional cookie fix. Ideally a vegan cookie that does not rely on non-hydrogenated oil or butter substitute.
Today I decided to try a very quick and easy recipe for Chocolate Chip Spelt Cookies from Vegetarian Times. The appeal of this recipe is the few ingredients called for, it's very easy to cut the recipe in half and you don't need to lug out your mix-master to make them. I substituted creamy peanut butter and whole wheat flour and folded in a combination of chopped peanuts, semi-sweet and milk chocolate chips. The result is a very pleasant soft Peanut Butter Cookie, definitely worth making when you have a mid-night cookie craving.
I cut the recipe in half and made 12 cookies that are approximately 240 calories each.
