Fall is on the way and that makes me think of warm apple cobbler. Instead of making 1 large cobbler I prefer to make 2 single serving individual cobblers. This way I can enjoy a fresh, warm from the oven cobbler any time with out having the leftovers taunting me - or “mocking me” as Alexis and Jacob would say. These are quick, easy, delicious and relatively healthy with only 415 calories in each cobbler.

Cobbler for Two
2 apple, sliced
2 tsp. lemon juice
2 tsp. sugar*
1/4 tsp vanilla paste
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
pinch of salt
Topping
¼ cup oats
¼ cup flour
¼ cup packed brown sugar
2 T butter
Preheat the oven to 375 degrees. Butter two individual mini casserole dishes, ramekins or any oven proof dish.
Slice the apples on the thick side then cut each slice in half. Toss apple slices with lemon juice, sugar, vanilla and spices. Divide apple slices between the two prepared dishes.
Combine oats, flour, brown sugar and butter to make crumble and sprinkle on top of cobbler.
Bake in a 375 oven for 25 minutes. Don't overcook or the apples become mush.
*Can use 2 tsp honey or maple syrup in place of sugar.
