I have never made waffles before and decided to give it a try this morning. After looking at endless recipe options, I choose a vegan recipe from one of my favorite vegan food blogs Have Cake, Will Travel.
I don’t care for syrup on my waffles but Wilson does so I warmed up a little maple syrup with some sliced apples in it and gave him the syrup and I used the maple cooked apples as my topping. This gave me more then enough sweetness with out ending up with a soggy syrup soaked waffle.
Almond Waffle
1 cup flour (½ whole-wheat, ½ all-purpose)
1/2 cup almond meal
1/2 tsp baking powder
1/4 tsp kosher salt
1 ¼ cup soy milk
1 T walnut oil
2 tsp maple syrup
1 tsp pure almond extract
I used my George Foreman Grill with the waffle pans attached, and the heat set to HIGH.
Combine dry ingredients in a large bowl.
Combine the wet ingredients in a small bowl and whisk well. Pour the wet ingredients into the dry and gently fold together, just until combined.
When the grill is good and hot spray it with a little oil and add your batter. I cooked these waffles for about 6 minutes but it will vary depending on your waffle maker.
Makes 4.
