Canned pumpkin is a pantry staple of mine and I use it in countless recipes. The frustration is that most recipes call for 1 cup of pumpkin, which means you have about 6 ounces left in the can. One simple way to use up the remaining pumpkin is to combine it with an equal amount of vanilla flavored soy yogurt, a little bit of honey and cinnamon, ginger, cloves and nutmeg to taste. I then served it over chopped apples topped with granola in Best Breakfast style.
