Without a doubt this is one of my favorite wine accompaniments - simple and delicious savory shortbread topped with delicious delights.
The shortbread in the above photo is a Parmesan shortbread with walnuts and rosemary served with a sweet onion pepper jelly.

In this photo I was serving an Irish white cheddar and Parmesan shortbread with almonds and cracked black pepper. The toppings are spicy apple garlic jam, sweet onion pepper jelly and roasted onion garlic jam.

The toppings can be what ever you dream up. I topped these white cheddar shortbread's with chutney and stone ground mustard, which is a surprisingly delicious combination, and apple garlic jam with fresh apple slices.
My favorite is an elegant blue cheese and hazelnut variety and Wilson's favorite is a spicy sharp cheddar, Dijon, Tabasco and cayenne pepper shortbread. The variations are only as endless as your imagination.
The dough can be made in advance, wrapped in small portions and stored in the freezer. When I need a quick appetizer I simply slice the dough, bake it and serve.
