Most recipes for pumpkin muffins call for only 1 cup of pumpkin, what do you do with the other half cup or so left in the can?  I started playing around with pumpkin muffin recipes trying to create one where I can use the whole can to make 12 muffins.  I'm almost there!   These muffins contain 1 whole can of pumpkin and have a very moist texture, closer to a pumpkin pie then a muffin.  They are pretty good but I'm going to continue to play around with the recipe and tweak the texture.
