Little Bits

I just love this quick and easy beer bread recipe. It’s slightly sweet and delicious as is or with a drizzle of honey. For best results use a full bodied beer or ale, the darker the beer the richer the flavor.

Whole Wheat Beer Bread
1 ½ cups all-purpose flour
1 ½ cups whole wheat flour
1 T. baking powder
1 teaspoon kosher salt
⅓ cup packed brown sugar
1 12-oz bottle beer
Preheat oven to 350 degrees.
Lightly grease an 8-inch loaf pan.
In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stir until a stiff batter is formed. Scrape dough into prepared loaf pan.
Bake in preheated oven for 50 to 60 minutes*, until a toothpick inserted into center of the loaf comes out clean.
Remove from pan and let cook on rack.
*I find 50 minutes to be perfect.

Cornbread Twist
Use 2 cups all purpose flour and 1 cup fine grind cornmeal.
